Is there a way to upgrade OJS in the old way, meaning not writing any code in the server shell, but just by replacing the folders to ftp?

yes, you can update via the web but I strongly recommend that you know PHP and database query because it will give an error hahaha and you need to know how to read, if you have problems with the update I do ojs updates I am an expert in this but there is a price or if you want you can post your questions and I can help when I have free time
