We have been informed by our hosting company that they will be migrating our journal website to a new server. The main impact on us seems to be a) some downtime; b) IP addresses will change.
Will this change in IP addresses have any impact on a fairly standard OJS installation? Are there any measures you would advise we take to prepare?

The OJS software is agnostic with respect to the IP address. You can change the IP of the server without needing to change configurations internal to OJS.
It is possible, but unlikely, that some of your underlying server architecture could be IP-dependent… for example, mysql permissions, firewall rules, Apache virtualhost listeners, etc. Your hosting company would probably take care of any dependency on this level for you.
