Is there a way to have the PdfJS viewer plugin (the full-page viewer) from OJS3 in OJS2? It’s a lot nicer for viewing PDFs. Can I simply replace the one from OJS2 with the new one?

No, the OJS3 plugin can’t be used with OJS2. You might be able to improve the presentation with a little work on the templates and CSS, but I would suggest considering an upgrade to OJS3.
