Is it possible to create new variables to email templates via plugin?
I have been looking in the documentation, but I couldn’t find out.
Could anybody help me with an example?

No, not so far as I know. The use of new email variables requires customization of the code within OJS. There have been some improvements as to how this is managed, but it doesn’t include the ability to introduce new variables, rather manage them more effectively: https://docs.pkp.sfu.ca/learning-ojs/en/about-ojs#workflow
