Change language text field to select field

Hi

we have activated language metadata for our journals in ojs 3.1.1.4 installation.
We want to change this text field from quicksubmit and submission form for a select list. The reason is to store this metadata based on ISO639-2 codes.
Some specific repostories that collect us usinf OAI-PMH check that this metadata values match to this ISO.
We are not sure how to do this change, can you give us some advise?
