What can I do in my theme to make the PKP course system responsive? Does the system support it? Are there any themes or plugins you can recommend?

Most of the modern themes in the plugin gallery should be responsive. You may want to test out out some of the available themes. For further instructions on how to configure themes, please see here: Learning Open Journal Systems 3.3 - Website Settings
