we have 5-6 people editors participating in editing-layout-proofreading process. I was wondering when PDF layouts are prepared for the final journal and page numbers are assigned to each article - how the different person which do not know the others are making the layout with the pages? Is there a way to mark in the system if someone start formatting a paper with a specific pages and others to see that and take the next page numbers for the next article?

There’s nothing in OJS 2.x to facilitate that kind of conversation. In OJS 3.0 (due out this summer) there’s a generic tool you can use to create conversations between users working on the same submission, a bit like a threaded email conversation; that would be a logical place to coordinate pagination.
